The quality scallops are farmed on ropes suspended above the seabed, ensuring the scallops are free from contaminants and sediment such as grit or sand. They are processed live and snap frozen within hours of being harvested, resulting in a firm texture and natural sweetness that only the best quality scallops can offer.
